While we love to eat well, life as AmeriCorps volunteers doesn’t afford us the budget to try every new restaurant and type of cuisine. With many post-graduate expenses and very limited financial resources, what’s a foodie to do?
The answer is here at Humble Foodie. Instead of spending all our hard-earned cash paying other people to cook for us, we’re spending as frugally as possible making delicious meals at home. We (Kerry and Alicia) started this blog in fall 2011 to provide recipes that our friends could easily replicate at home. We wanted to see pictures of meals that were cheap but still made our mouths water. There are many amazing blogs related to cooking or living frugally, but not many are written from the perspective of a recent college graduate cooking for one–so here we are!
Today, the Humble Foodie has evolved into a place for recipes, DIY projects, musings on adulthood and positivity, and the occasional picture of a T-rex in Valentine’s Day attire. Alicia primarily maintains the site, but don’t worry: we are still exchanging recipes, cooking together, and celebrating each other’s birthdays. Starting this blog was the beginning of an amazing friendship that has evolved into a small community of fantastic, friendly people sharing ideas and darn good food. We hope you’ll join us.
