This school year has been incredibly busy, and I’ve grown to appreciate the importance of strategizing in the kitchen. On Sundays, I usually cook one big dish that I can eat for lunch throughout the week. When I know I’ll be rushing in the evening, I pull something out of the freezer to defrost by dinner time. If I have what feels like an endless to do list, a simple dinner is far more satisfying than a big meal that requires plenty of work.
Today’s post is short, since I have to go pack for my trip to Colorado this weekend. If you want to add some delicious healthy fat to your diet, consider wild caught salmon. I get it frozen from Trader Joe’s and use it as an easy weeknight dinner.
Broiled Salmon- serves 2
Prep: 2 minutes
Cook: 10 minutes
Two 4 ounce wild caught, skin on salmon fillets
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon dried dill
Salt and pepper to taste
Preheat the broiler on high while preparing the salmon. Line a small baking sheet with foil and place salmon on the sheet. In a small bowl, mix oil, lemon juice, and seasonings. Spoon over each salmon fillet until evenly covered.
On a rack placed in the top third of the oven, broil salmon for 8-10 minutes. Check regularly until salmon flakes when pulled with a fork.
