Alicia and I decided to prepare dinner the other night. After lingering over what to make, we decided to throw together a salad-simple, delicious, and a perfect dish to enjoy in the warm weather!
Through my various cooking adventures, I have learned you can add anything to a salad, and it is almost guaranteed to be delicious!
After we assembled our salad, we sat outside on the grass and enjoyed the smell of the flowers and Alicia’s garden. It’s amazing how much happier we feel eating outside, so don’t forget to enjoy the weather!
Salad Ingredients
Spinach
Cantaloupe
Feta
Chopped pecans
Prosciutto
Dressing Ingredients-Enough for 10 salads
2 tablespoons honey mustard
2 tablespoons spicy brown mustard
1 tablespoon honey
Juice of half a lemon
3 tablespoons olive oil
2 tsp balsamic vinegar
Salt and pepper
To make the salad, layer cantaloupe, feta, pecans, and prosciutto on spinach. Mix all dressing ingredients and add salt and pepper to taste. Pour dressing over salad and toss. Pair with a crisp white wine!

Never tried brown mustard, how intriguing. The dressing sounds delicious, will def be giving it a go…and people say salads are boring?!?!
The salad is great on its own but the dressing adds a lovely additional layer of spicy/sweet/peppery flavor. I usually just have good olive oil and a bit of balsamic vinegar, but this was a nice treat!
