Apple Spice Cupcakes with Brown Sugar Frosting
I searched for the perfect fall cupcake and found just that! This cupcake blends some must have fall flavors…cinnamon, nutmeg, and apple — a classic combination for a crisp autumn day! The sweet frosting compliments the subtle spice cake. A scrumptious treat!
Apple Spice Cupcake

- 1 Cup shredded or cubed apples
- 2 Cups flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 2/3 Cup butter
- 1 Cup packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 3/4 apple juice

Preheat oven to 350 degrees. Combine flour, baking powder, and spices. Beat butter and brown sugar until creamy. Beat in eggs and vanilla. Fold in flour. Pour in apple juice. Mix in apples. Bake 20-25 minutes or until golden brown.
Brown Sugar Frosting

Melt butter in saucepan. Stir in brown sugar. Continue stirring and boil over medium heat. Add milk and return to a boil. Remove from heat and let cool. Sift confectioners’ sugar to make smooth and beat in. Frost cooled cupcakes.
Add some extra “spice” to the cupcakes by piping the frosting. Use a 1M tip. Start on the outside or the cupcake and circle inward towards the middle. Sprinkle cinnamon on top if desired.
